Brisket:
How do you like your brisket? We usually smoke our brisket for 10 hours, and there are two schools of thought about how a brisket should turn out. If you have a specific request, please share it in the notes.
1. Traditional - cooked for 10 hours but won't easily fall apart and is easy to slice.
2. Non-Traditional - Cooked longer so that it will easily fall apart.
