Our Caveman Roast is the ultimate carnivore feast!
It’s a tender, juicy and marbled hunk of boneless USDA Prime Ribeye wrapped in halved beef marrow bones. You can smoke this or cook it in the oven, the results will be fantastic either way. What makes this roast unique is that while the prime ribeye cooks over indirect heat, the marrow partially melts and infuses the meat with a rich and savory buttery flavor. Not only do you end up with the most succulent roast, but you also get perfectly roasted marrow bones to serve with every portion.
Approx 2 - 2.5kg : Ribeye Roast - 1.3 - 1.5kg
Approx 3.5 - 4kg : Ribeye Roast - 2 - 2.2kg
Cooking instructions :
Cook the Caveman Roast on its side, so its laying on the bones
Cook temp: 350°F / 176°C
Cooking time is based on 45 - 50 mins per meat kg
(For example, if the Ribeye is 2kg, cook for 1.5 hours and check the internal temp)
Internal temp should be 120°F / 49°C for medium rare
Once you have reached the desired internal temp, remove, wrap it in aluminum foil and let it rest for 15-20 mins
Remove the marrow bones and serve.
Tip: use the marrow drippings in a butter sauce or spices or add it directly on top of the roast
