When ordering you will be getting a full rack of our St. Louie Spare pork ribs that are smoked for 3 hours with our in-house rub over mesquite and hickory. Our in-house rub is a little sweet and a little spicey giving it that perfect balance. Enjoy!
Wet: We baste them 3 times over the 3-hour cooking process. (Kansas City-Style Rib).
Dry: We apply rub at the beginning and let them smoke for 3 hours. (Carolina Style Rib)
Fine Print: Please note that smoked meat shrinks. For pork ribs, there should be a 15-20% loss in weight.
