INGREDIENTS:
- 1 pack Turkey Bacon
- Hardcore Sweet BBQ Rub seasoning
- 7 fresh jalapeños, slice in half, seeds and veins removed
- 280 ml cream cheese, softened
- 330 gr shredded sharp cheddar and Monterey Jack cheese
PREPARE THE SMOKER
Prepare your smoker or pellet grill at 275F. In this recipe we used a Traeger Pro 780 with Signature Blend pellets. Mesquite, Oak or Pecan would also be good choices.
PREPARE THE JALAPEÑO POPPERS
- Combine the cream cheese and shredded cheese, and 1 tbsp. of Hardcore Sweet BBQ Rub.
- Stir to combine.
- Fill each 1/2 jalapeño with the cream cheese mixture.
- Wrap with one slice of bacon.
- Optionally use a toothpick to secure
- Season with Hardcore Sweet BBQ Rub
GRILL THE JALAPEÑO POPPERS
- Place the jalapeño poppers in the Traeger and smoke at 275F.
- Pull the poppers off when the bacon looks just right, and cheese has melted. That will take approximately 45-50 minutes at 275F.
- Remove from the grill and allow to cool.
