Traeger Jalapeño Poppers

INGREDIENTS:

PREPARE THE SMOKER

Prepare your smoker or pellet grill at 275F. In this recipe we used a Traeger Pro 780 with Signature Blend pellets. Mesquite, Oak or Pecan would also be good choices.

PREPARE THE JALAPEÑO POPPERS

  • Combine the cream cheese and shredded cheese, and 1 tbsp. of Hardcore Sweet BBQ Rub.
  • Stir to combine.
  • Fill each 1/2 jalapeño with the cream cheese mixture.
  • Wrap with one slice of bacon.
  • Optionally use a toothpick to secure
  • Season with Hardcore Sweet BBQ Rub

GRILL THE JALAPEÑO POPPERS

  • Place the jalapeño poppers in the Traeger and smoke at 275F. 
  • Pull the poppers off when the bacon looks just right, and cheese has melted. That will take approximately 45-50 minutes at 275F.
  • Remove from the grill and allow to cool.
