Ingredients:

For the Mustard Cheese Sauce:

  • 6 tablespoons butter
  • 6 tablespoons all-purpose flour
  • 3 cups milk (warm, but not hot)
  • 1 cup shredded cheddar cheese
  • 2 tablespoons grain mustard
  • Salt and pepper to taste

For the Sando:

  1. Prepare the Milk:

    • Warm the milk in a microwave or a non-stick saucepan for a few minutes. Avoid boiling; you just want it warm. Set aside.
  2. Make the Roux:

    • In a non-stick saucepan over medium heat, melt the butter.
    • Remove the saucepan from heat. Stir in the flour using a wooden spoon until the mixture forms a smooth, yellow paste (this is your roux).
  3. Combine Roux and Milk:

    • Return the saucepan to medium heat. Stir and cook the roux for 20-30 seconds to slightly dry it out.
    • Switch to a hand whisk and gradually add 1/2 cup of the warm milk, whisking continuously to blend the roux into the milk.
  4. Finish the Sauce:

    • Add the remaining 2 cups of warm milk and bring the mixture to a boil.
    • Reduce the heat and stir occasionally. Cook for about 10 minutes, or until the sauce becomes creamy and thick. If the sauce is too thick, stir in a bit more milk and simmer until it reaches your desired consistency.
    • Once thickened, stir in the shredded cheddar cheese and cook for 1 minute or until the cheese is fully melted.
    • Season with salt, pepper, and grain mustard to taste.
  5. Assemble the Sando:

    • Toast the Martin’s Potato Bun to your liking.
    • Layer 100 grams of Butchershop Signature Roast Beef on the bun, folding the slices to cover the entire surface.
    • Drizzle the warm mustard cheese sauce generously over the roast beef.
