Fine Print: Please note that smoked meat shrinks. When you buy a 3.5kg short rib, you don’t end up with 3.5kg of smoked meat. Meat shrinks massively when smoking for hours and hours. Your initial 3.5kg will become 1.5-2kg. Yes, they lose that much weight during the smoking process— it’s the same for briskets, turkeys, etc.
